If you want a certain job you ll need to place the job block that corresponds with the desired job next to an unemployed villager. If you don t get the desired trades from a villager you can break the job. If you want to assign a specific villager to a specific work station you have to make sure all other possible work stations in a 64 block radius i believe this number is right but i m not sure.
